RV Convection Oven Creation! Cooked this yummy dessert made from a cake mix base. I used my cast iron skillet for this recipe. So easy and super yummy!
  • 1 pkg Duncan Hines Signature Pineapple Supreme Cake Mix
  • 1 (3.4 oz) pkg vanilla instant pudding
  • 4 large eggs
  • 1 C water
  • ½ C canola oil
  • Topping:
  • ½ C stick butter or margarine
  • 1 C firmly packed brown sugar
  • 1 (20 oz.) can pineapple slices
  1. Preheat oven to 350 degrees. Melt butter over low heat in a 12" cast iron skillet. Remove from heat. Stir in brown sugar. Spread to cover the bottom of the skillet. Arrange pineapple slices in skillet and set aside.
  2. In another bowl, combine cake mix, pudding mix (dry), eggs, water, and oil. Beat at medium speed with an electric mixer or hand mix with a whisk for about 2 minutes. Pour batter evenly over fruit in the skillet.
  3. Bake at 350 degrees for 1 hour and 10-15 minutes. At 1 hour, start checking the cake. If a toothpick inserted comes out clean, it is done. Remove from oven and invert onto a serving plate immediately.

    My mom always added maraschino cherries in the center of pineapple slices. Added color and taste!
