Cheeseburger Soup

This hearty, stick-to-your-ribs soup is a family favorite in our rig. It's always better the second time around, so I make a double batch to have again later in the week.
  • 1 lb ground beef or ground turkey
  • ¾ C chopped onion
  • ¾ C shredded carrots
  • ¾ C diced celery
  • 1 tsp dried parsley
  • 4 Tbsp butter (divided)
  • 3 C chicken broth
  • 4 C diced peeled potatoes
  • ¼ C all-purpose flour
  • 2 C Velveeta Cheese (cubed)
  • 1½ C milk
  • ¾ tsp salt
  • ½ tsp pepper
  • ¼ C sour cream
  1. In a large pan, brown ground meat. Drain and set aside. In the same pan, sauté the onion, carrots, and celery along with the parsley in 1 Tbsp of butter. Cook until vegetables are tender (about 10 minutes). Add the broth, potatoes and cooked ground meat. Bring to a boil; cover and simmer for 10-12 minutes or until the potatoes are tender.
  2. Meanwhile, in a small skillet, melt the remaining butter. Add flour; cook and store for about 5 minutes or until bubbly. Add to soup. Bring to a boil. Keep stirring soup and cook for 2 minutes. Reduce heat to low. Stir in cheese, milk, salt, and pepper. Continue cooking and stirring until the cheese melts. Remove from the heat. Blend in sour cream. Serve.
